Iced Sandwich Cake
|Sandwich cake||1 Small|
|Butter icing||1⁄4 Cup (4 tbs) (Using 2 Ounce Butter, Etc)|
|Glace icing||1⁄4 Cup (4 tbs) (Using 7 Ounce Icing Sugar)|
Colour and flavour the butter icing as desired.
Cut the sandwich cake through the middle and spread with just over half of the butter icing.
Sandwich together again and remove any loose crumbs with a clean pastry brush.
Place cake on a cooling tray over a plate.
Mix glace icing to coating consistency, colour and flavour carefully.
Pour icing on to centre of cake and allow to run over top and down sides.
Try to avoid touching the top with a knife—a knife will be necessary for completing the sides.
Allow to set.
Decorate, if desired, by piping with remaining butter icing.
