Tasty Fresh Apple Cake
|Oil||1 1⁄2 Cup (24 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Flour||3 Cup (48 tbs)|
|Baking soda||1 Teaspoon|
|Apples||3 1⁄2 Cup (56 tbs), peeled (and)|
|Walnuts||1 Cup (16 tbs), chopped|
|Vanilla extract||2 Teaspoon|
1. Heat oven to 325°. Butter and lightly flour a 10-inch tube pan (bundt) or cake pan. Combine oil and sugars; add eggs. Sift or whisk together flour, cinnamon, baking soda, nutmeg, and salt.
2. Fold in apples, nuts, and vanilla. Batter will be very stiff. Transfer to prepared baking pan.
3. Bake for 90 minutes or until toothpick inserted into cake comes out dry. Allow to cool slightly before turning out of pan to cool completely. Top with your favorite caramel icing or keep it plain. This also makes a great layer cake or sheet cake.
