Apple Nut Cake
|Whole wheat flour||2 Cup (32 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1 Tablespoon|
|Soft butter||1⁄2 Cup (8 tbs)|
|Diced walnuts||1 Cup (16 tbs)|
|Lemon||1 , juiced|
1.Sift flour, sugar, baking powder and salt into a mixing bowl. Add butter & egg. Knead until dough is firm and shapes easily into a ball.
Wrap in wax paper; refrigerate 1 hour.
2. Peel apples; cut into small pieces. Add sugar, nuts, lemon juice and cinnamon. Let mixture steep until dough is ready.
3. Preheat oven to 350 degrees.
4.Butter a 9" springform pan.Divide dough into thirds.Roll out 1/3 to line bottom of pan.Roll another 1/3 and line inside halfway to top of pan, pressing bottom rim to seal sides and bottom.
5. Drain fruit and pour into pastry-lined pan.Roll out last 1/3 of dough and make strips.Place strips crisscross on top of filling.Bake until golden b'rown, 45 to 55 minutes. Cool and serve.
