Wacky Cake

Wacky Cake is an easy chocolate cake made right in the pan. Moist and delicious, serve with a little soy whipped cream or dairy-free ice cream.
Ingredients
  Whole wheat pastry flour 2 1⁄4 Cup (36 tbs)
  Cocoa powder 4 Tablespoon
  Salt 1 Teaspoon
  Baking soda 1 1⁄2 Teaspoon
  Sweetener/Raw sugar, agave nectar, or maple, rice or barley syrup 1⁄2 Cup (8 tbs)
  Vanilla 1 1⁄2 Teaspoon
  Vinegar 1 1⁄2 Tablespoon
  Oil 4 Tablespoon
  Unsweetened applesauce 5 Tablespoon
  Water 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1. Preheat the oven to 350F.

MAKING
2. In a 9 x 13 baking dish, place all dry ingredients, mix with a fork.
3. Add in the wet ingredients and continue combining thoroughly.
4. Bake at 350F for 25 to 30 minutes until tip of an inserted toothpick comes out clean.

SERVING
5. Serve topped with dairy free ice cream, soy whipped cream or frosting.

NOTE
This cake tastes best if consumed withing 1 to 2 days.
