Date Nut Cake
|Whole wheat pastry flour||1 2⁄3 Cup (26.67 tbs)|
|Baking soda||1 Teaspoon|
|Safflower oil||3 Teaspoon|
|Honey||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Dates||1 Cup (16 tbs), chopped|
|Nuts||1⁄2 Cup (8 tbs), chopped|
Combine all ingredients but dates and nuts in large bowl of electric mixer.
Beat 1/2 minute at low speed to blend, scraping bowl.
Increase speed to high and beat 3 minutes, scraping bowl occasionally.
Stir in dates and nuts.
Pour into a greased and floured 9 x 9 x 2-inch pan.
Bake at 350° about 45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Remove from pan and cool on wire rack.
Serve plain, frosted, or with Lemon Sauce or Orange Sauce.
