Ingredients
  Ripe banana 1 , mashed
  Low calorie margarine 1⁄2 Cup (8 tbs), softened
  Egg beaters/3 eggs 3⁄4 Cup (12 tbs)
  Unsweetened crushed pineapple 1⁄2 Cup (8 tbs) (Undrained)
  Apple 1 , peeled and chopped finely
  Unsweetened apple juice 1 Cup (16 tbs)
  Vanilla 1 Teaspoon
  Unbleached flour 3 Cup (48 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Soda 1 Teaspoon
  Cinnamon 1 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Dates 1 2⁄3 Cup (26.67 tbs), chopped
  Chopped walnuts/Pecans 1⁄2 Cup (8 tbs)
Directions

Blend mashed banana and margarine together.
Add other liquid ingredients and mix well.
In separate bowl mix flour, baking powder, soda, cinnamon and nutmeg together.
Then add dry ingredients slowly to liquid while mixing at a low speed on the electric mixer.
Lastly, add dates and nuts.
Bake at 350° for 30-40 min
Cake is done when a knife or toothpick inserted comes out clean.
