  Beaten eggs 2
  Dry sherry 3 Tablespoon
  Sugar 3⁄4 Cup (12 tbs)
  All purpose flour 4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Almonds 3⁄4 Cup (12 tbs), ground
  Rich pastry 1
  Strawberry jam/Raspberry / plum jam 2 Tablespoon (Adjust Quantity As Needed)

Mix eggs and sherry.
Combine sugar, flour, and nutmeg; stir into egg mixture.
Stir in almonds.
Roll Rich Pastry 1/8 inch thick and cut twenty-four 2 1/2-inch circles; fit into 1 3/4-inch muffin pans.
Spoon dot of jam into each shell; pour egg mixture atop.
Bake at 350° till wooden pick comes out clean, 23 to 25 minutes.
Rich Pastry: Stir together 1 cup all-purpose flour, 1 tablespoon sugar, and 1/4 teaspoon salt.
Cut in 1/4 cup butter till mixture resembles small peas.
Using 1/4 cup milk, sprinkle 1 tablespoon milk at a time over part of mixture.
Toss with fork; push to side of bowl.
Repeat sprinkling and tossing till all is moistened.
Form into ball.
