Simple Christmas Cake
|Plain flour||12 Ounce|
|Sugar||6 Ounce (Moist)|
|Ground ginger||1⁄4 Ounce|
|Soda bicarbonate||2 Teaspoon (Leveled)|
Grease and line a 7-in cake-tin.
Warm the butter but do not allow it to oil.
Sift the flour into a bowl, add the sugar, ginger and chopped raisins.
Mix well, then stir in the butter, cream, treacle and well-beaten eggs.
Beat for a few minutes.
Pour the vinegar on to the soda and stir into the mixture.
Put into the prepared cake-tin and place immediately in a warm oven (335° F., Gas 3).
Reduce heat to 310° F.,Gas 2.
