Old Fashion Banana Streusel Cake
|Fat free margarine||1 Cup (16 tbs) (Divided)|
|Sugar/1 cup sugar + 12 packets sweet n low||2 Cup (32 tbs) (Divided)|
|Cake flour||2 1⁄4 Cup (36 tbs) (Divided)|
|Grape nuts cereal||1⁄2 Cup (8 tbs)|
|Light brown sugar/2 tablespoon brown sugar + 1/2 tsp. sweet 'n low brown||4 Tablespoon (Divided)|
|Low fat buttermilk||1⁄3 Cup (5.33 tbs)|
|Bananas||3 Large (1 1/2 Cups Pureed)|
|Baking soda||1 Teaspoon|
|Baking powder||1 Teaspoon|
|Lite salt||1⁄2 Teaspoon|
Preheat oven to 350°F.
Spray a square 9 x 13-inch pan with a non-fat cooking spray.
For streusel, blend with fork or pastry blender 1/4 cup Promise Ultra Fat-Free margarine, 2 Tbs. brown sugar, 3/4 cup sugar, 1/2 cup Grape-Nuts cereal, 1/2 cup flour, and 1/4 tsp.
lite salt until it is just moistened.
For cake, use mixer to cream 1 1/4 cups sugar, plus 2 Tbs. brown sugar, vanilla, and 3/4 cup Promise Ultra Fat-Free margarine until smooth.
Add Egg Beaters and mix well (about 3 minutes).
Add buttermilk and bananas.
Mix well to combine.
Sift 1 3/4 cups flour, baking powder, baking soda, and 1/4 tsp.lite salt.
Add gradually to batter, mixing until smooth.
Transfer batter to prepared pan.
Smooth surface with spatula.
Sprinkle reserved streusel evenly over the surface.
Bake until medium brown and toothpick inserted in center comes out clean, about 35-45 minutes.
Let cool 30 minutes before serving.
