Pineapple Brunch Cakes
|Cream cheese||3 Ounce, softened (1 Package)|
|Canned crushed pineapple||8 1⁄4 Ounce, well drained (1 Can)|
|Chopped pecans||1⁄4 Cup (4 tbs)|
In small mixer bowl combine cheese and sugar.
Beat in egg and vanilla; stir in pineapple.
Split muffins; place on baking sheet and toast under broiler.
Reduce oven to 375°.
Spread pineapple mixture atop muffins, using about 1 1/2 tablespoons mixture for each.
Sprinkle with pecans.
Bake at 375° for 6 to 8 minutes.
