Healthy Apple Cake
|Whole wheat flour||2 Cup (32 tbs)|
|Wheat germ||1⁄4 Cup (4 tbs)|
|Baking soda||2 Tablespoon|
|Cooking apples||5 , peeled, cored, and diced|
|Sugar||1 Cup (16 tbs)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Chopped walnuts||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Confectionery sugar||1 Teaspoon|
Preheat oven to 350°. Grease a tube pan or a 13" X 9" x 2" baking pan.
Stir together flour, wheat germ, baking soda, cinnamon, salt, and nutmeg.
In a large bowl, combine apples, sugar, brown sugar, oil, walnuts, eggs, and vanilla.
With a wooden spoon, gently blend in flour mixture. Turn into prepared pan.
Bake at 350° for 50 minutes or until cake pulls away from the sides of the pan. Cool cake completely.
If a tube pan is used, remove from pan and dust with confectioners sugar. If a rectangular baking pan is used, dust with confectioners sugar, cut into squares and serve.
