Spice Cake

Ingredients
  Butter/Margarine 8 Tablespoon
  Sugar 1 Cup (16 tbs)
  Brown sugar 1 Cup (16 tbs)
  Eggs 3 , beaten
  Mixed dried fruit 1 1⁄4 Cup (20 tbs)
  Pecan nuts 2⁄3 Cup (10.67 tbs), chopped
  Self rising flour 2 1⁄2 Cup (40 tbs)
  Ground cinnamon 1⁄2 Teaspoon
  Mixed spice 1⁄2 Teaspoon
  Heavy cream 1 2⁄3 Cup (26.67 tbs)
Directions

Pre-heat the oven to 350°F and grease and flour an 8 inch round cake pan.
Cream the butter and sugars together, then gradually add the eggs, beating well after each addition.
Mix all the remaining ingredients except the cream into the egg and butter mixture.
Then add the cream and mix well.
Spoon the mixture into the cake pan and bake for 1 hour, or until a knife inserted into the cake comes out clean.
