Pineapple Fruit Cake

Ingredients
  Sugar 8 Ounce
  Canned crushed pineapple 15 Ounce (1 Can)
  Mixed fruit 1 Pound
  Soda bicarbonate 1 Teaspoon
  Mixed spice 1 Teaspoon
  Butter 4 Ounce
  Plain flour 4 Ounce
  Self rising flour 4 Ounce
  Eggs 2
Directions

Place sugar, contents of can of pineapple, chopped mixed fruit, bicarbonate of soda, spice and butter into a saucepan.
Bring to boil, boil 3 minutes; remove from heat, cool completely.
Sift flours together, mix into cold fruit mixture with well-beaten eggs.
Place mixture into greased and lined 8 in. cake tin.
Bake in moderate oven, Mark 4, 350°F.,reduce heat to moderately slow, Mark 2, 300°F., bake further 20 to 30 minutes or until a skewer, inserted, comes out clean.
