Upside Down Cake
|Firmly packed brown sugar||1 Cup (16 tbs), divided|
|Canned fruit||16 Ounce (1 Can)|
|Quick mix||2 Cup (32 tbs)|
Melt butter in a 9-inch baking pan.
Sprinkle 1/2 cup sugar over butter.
Drain fruit, reserving liquid.
Spread fruit over sugar.
Add water to juice to equal 1 cup.
Combine Quick Mix, remaining 1/2 cup sugar, egg, and juice in a large bowl; beat until smooth.
Pour batter over fruit and bake at 350° for 30 minutes.
Invert onto serving dish.
