Walnut Pineapple Carrot Cake

Combine carrot with pineapple and make this dessert and enjoy it with tea or coffee. This cake is always a favorite for a quick snack or even a dessert for kids.
Ingredients
  Eggs 3
  Vegetable oil 3⁄4 Cup (12 tbs)
  Brown sugar 3⁄4 Cup (12 tbs)
  Ginger 2 Teaspoon, minced
  Pineapple juice 1⁄4 Cup (4 tbs)
  Flour 1 2⁄3 Cup (26.67 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  All spice 1⁄2 Teaspoon
  Shredded carrots 2 Cup (32 tbs)
  Pineapple bits 1 Cup (16 tbs)
  Walnuts bits 1⁄4 Cup (4 tbs)
  Butter 1⁄2 Cup (8 tbs)
  Cream cheese 1⁄2 Cup (8 tbs)
  Icing sugar 1 2⁄3 Cup (26.67 tbs)
Directions

Mix eggs, oil, ginger, brown sugar and pineapple juice. In a bowl, mix flour, baking powder, baking soda and salt. Then add cinnamon, nutmeg, allspice. Mix the wet and dry mixtures. Add carrots, pineapple and walnuts and stir it till mixed. Grease a pan and pour your mixture into it. Bake it for 70-80 minutes at 325 F. Inserted a toothpick to check if the cake is done. The toothpick should come out dry. Cool the cake and make icing. Mix icing sugar, cream cheese and butter into a smooth paste and apply it over the cake. Top the cake with walnuts and pineapple and enjoy!!!
