Steamed Sponge Cake
|Sugar||1⁄2 Cup (8 tbs)|
|Lemon extract||1⁄4 Teaspoon|
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
Over high heat, bring water for steaming to boiling.
In small mixer bowl beat egg yolks till thick and lemon-colored (4 minutes); beat in the 2 tablespoons water.
Gradually beat in 1/2 cup sugar; beat in vanilla and lemon extract.
Wash beaters well.
In large mixer bowl beat egg whites till soft peaks form; gradually add 1/2 cup sugar, beating constantly till stiff peaks form.
Fold yolks into whites.
Stir together flour, baking powder, and salt; fold into egg mixture.
Turn batter into greased and floured 8x8-inch baking pan.
Place uncovered pan on steamer rack over boiling water.
Cover steamer with dish towel; cover with steamer lid.
Steam about 25 minutes or till done.
