|Shortening||1 Cup (16 tbs)|
|Sifted cake flour||2 1⁄2 Cup (40 tbs)|
|Sugar||1 Cup (16 tbs)|
|Baking powder||1 1⁄4 Teaspoon|
|Mashed ripe bananas||1 1⁄4 Cup (20 tbs) (Fully Ripe)|
|Buttermilk/Sour milk||1 Cup (16 tbs)|
Place shortening in mixing bowl.
Sift dry ingredients together; add to shortening.
Add mashed bananas and 1/3 cup buttermilk; mix till moistened.
Beat vigorously 2 minutes.
Add remaining buttermilk and eggs; beat 2 minutes longer.
Bake in 2 greased and lightly floured 8 x 1 1/2-inch round pans in moderate oven (350°) about 40 minutes or till done.
Cool 10 minutes; remove from pans.
Frost with a creamy butter-type frosting.
