Mom'S Pineapple Upside Down Cake
|Canned pineapple chunks||8 Ounce (1 Can)|
|Syrup||1 Tablespoon (Reserved)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Butter cake||1 Cup (16 tbs)|
1. Place butter in an 8-inch square glass baking dish and microwave, uncovered, at Time Cook (power level 10) for 1 to 2 minutes, or until melted. Tilt dish to coat sides with butter. Stir 1 tablespoon reserved pineapple syrup and brown sugar into melted butter in the bottom of the dish. Arrange pineapple to cover bottom of dish.
2. Prepare butter cake. Gently ladle batter into prepared dish, being careful not to dishlodge pineapple. Microwave, uncovered, at Time Cook (power level 10) for 12 to 15 minutes, or until toothpick inserted in the center comes out clean. Rotate the dish 1/4 turn every 3 minutes' cooking time.
Let stand 2 minutes. Loosen edges invert onto a serving plate.
