Coffee Cake Muffins
|Sifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Shortening||1⁄4 Cup (4 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Spicy nuts||1⁄4 Cup (4 tbs)|
Sift together dry ingredients; cut in shortening till mixture resembles coarse crumbs.
Blend egg and milk; add all at once to flour mixture; stir just till dry ingredients are moistened.
Alternate layers of batter and Spicy Nuts in greased muffin pans, (ending with layer of batter), filling 2/3 full.
Bake in moderate oven (375°) for about 20 minutes.
