Rum Cake

My favorite Rum Cake Recipe. This cake is spongy and melts in your mouth. Rum adds so much flavor and taste to it.
Ingredients
  Chopped nuts 1 Cup (16 tbs)
  Yellow cake mix 300 Gram
  Vanilla pudding 250 Gram
  Eggs 4
  Cold water 1⁄2 Cup (8 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Drak rum 1⁄2 Cup (8 tbs) (preferably Bacardi)
  Butter 1⁄2 Pound (1 stick)
  Water 1⁄4 Cup (4 tbs)
  Sugar 1 Cup (16 tbs)
  Rum 1⁄2 Cup (8 tbs)
Directions

Sprinkle bottom of a greased 10 inch tube pan with the nuts.Mix all other ingredients together and pour over the nuts. Bake at 325 for about 1 hour.Cool for 5 minutes then invert onto cake rack.When cake is cool, poke holes all the way through with a long tined fork.Pour glaze over cake.

Glaze:
Boil the butter, water and sugar for 5 minutes, stirring constantly. Cool, then add the rum.Glaze will be a little runny.

Our family has been making this awesome cake for over 30 years. Everyone simply LOVES it. Adults only. I'll snap a photo next time we make it for you if you'd like. And yes it must be Bacardi and Dark is best for flavour! Shanti/Mary-Anne
