Apple Sundae Cake
|Nonfat frozen yogurt||2 1⁄4 Cup (36 tbs) (Soft)|
|Apple pie spice||1 Teaspoon, divided|
|Baking apple||1 Medium, peeled, cored and thinly sliced|
|Pear||1 Medium, peeled, cored and thinly sliced|
|Lemon juice||2 Teaspoon|
|Flour||1 Cup (16 tbs)|
|Unsweetened apple juice||1⁄2 Cup (8 tbs)|
|Sugar/1 tablespoon sugar plus 1 1/2 packets sweet 'n low||2 Tablespoon|
|Baking powder||1 Teaspoon|
|Lite salt||1⁄2 Teaspoon|
|Packed brown sugar/2 tablespoon brown sugar plus 1/2 teaspoon sweet 'n low brown||1⁄4 Cup (4 tbs)|
|Grape nuts cereal||2 Tablespoon|
|Raisins||2 Tablespoon, chopped|
|Boiling water||1 Cup (16 tbs)|
Combine frozen yogurt and 1/2 tsp.apple pie spice in a medium bowl.
Freeze until firm.
Arrange apple and pear slices in the bottom of a 9-inch square baking dish that has been sprayed with a non-fat cooking spray.
Sprinkle with lemon juice and set aside.
Combine flour and next 5 ingredients in a large mixing bowl.
Beat at high speed with an electric mixer until smooth.
Spoon batter over fruit slices.
Combine brown sugar, Grape-Nuts, raisins, and remaining 1/2 tsp.apple pie spice in a small bowl.
Sprinkle over batter.
Pour boiling water over batter in a slow, steady stream.
Bake at 375°F. for 30 minutes.
Let cool 10 minutes.
Cut into 3-inch squares.
Place on individual plates and top with 1/4 cup frozen yogurt mixture.
