Original Moravian Christmas Cakes

  Butter 3 Ounce
  Lard 3 Ounce
  Molasses 1 Quart (Porto Rico Style)
  Light brown sugar 3⁄4 Pound
  Flour 3 3⁄4 Pound (4 Cups To Pound)
  Brandy 150 Milliliter (1 Wine Glass)
  Mace 1 Tablespoon
  Ground cloves 2 Tablespoon
  Ground cinnamon 2 Tablespoon
  Grated lemon peel 1 Ounce
  Soda 1 Ounce (Added Last In Small Amount Of Milk To Dissolve)

Cream butter and sugar, add flour and molasses with mixed spices (in molasses).
Mix all together, using the hands.
Add lemon peel and brandy and last the soda dissolved in milk.
This should make a stiff dough.
If more flour is needed to stiffen dough, use it.
Roll very thin, cut cakes in shapes of stars, crescents, animals, etc.
Bake in moderate oven.
These will keep for weeks if placed in tins and can be made well before Christmas.
