Orange Blossom Cake
|2 layer size yellow cake mix||18 1⁄4 Ounce (1 Package)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Water||1 Cup (16 tbs)|
|Canned flaked coconut||3 1⁄2 Ounce (1 Can)|
|Fluffy white frosting mix||7 Ounce (1 Package)|
Cut unpeeled orange in chunks; blend at low speed in electric blender till almost smooth, or put through food chopper, using fine blade (2/3 cup ground orange will be needed).
Prepare cake mix following package directions; fold 1/3 CUP °f the ground orange into batter.
Bake according to directions in 2 greased and floured 8 x 1 1/2-inch round pans.
Cool 5 minutes.
Remove from pans; cool.
Combine sugar, next 4 ingredients, and remaining ground orange.
Cook and stir till mixture thickens and boils; cook 2 minutes.
Cool; stir in coconut.
Split each cake layer once, making 4 layers.
Spread layers and top of cake with orange-coconut filling.
Prepare frosting mix according to directions; spread on sides of cake.
Trim with orange sections.
