Grape Nuts Fruit Cake
|Fruit cake mix||1 Pound (Variety Of Candied Fruit)|
|Raisins/Pitted dates||1 Pound (1 Prefer Raisins)|
|Grape nuts cereal||2 Cup (32 tbs)|
|Sugar/1/2 cup sugar + 6 packets sweet n low||1 Cup (16 tbs)|
|Flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
Line angel food tube pan with a heavy brown paper, (a grocery store bag will work).
Spray with a non-fat cooking spray.
Cut fruits into small pieces; mix with Grape-Nuts cereal.
Sift dry ingredients together; mix with fruits and cereal.
Beat Egg Beaters with vanilla; pour over fruit mixture.
Pack into pan.
Bake 1 hr.45 min.-2 hours at 250°F.
Top of fruit cake may be decorated by removing cake from oven after 1 hour and garnishing with pineapple slices and halved cherries.
Return to oven to complete baking time.
Cool completely before removing from pan; preferably overnight.
