Boiled Serviceberry Cake
|Water||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Margarine||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Flour||2 Cup (32 tbs)|
|Eggs||2 , beaten|
|Walnuts||1 Cup (16 tbs), chopped|
Simmer serviceberries in water 15 minutes.
Drain, reserving 1 cup liquid.
Cream margarine and sugar.
Add spices and eggs.
Add flour to creamed mixture alternately with serviceberry water.
Fold in serviceberries and nuts.
Bake in square cake pan 25 to 30 minutes at 350°F.
