Date Cake

Ingredients
  Water 1 Cup (16 tbs)
  Baking soda 1⁄2 Teaspoon
  Pitted dates 1 Cup (16 tbs), chopped
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Butter/Margarine 1⁄4 Pound (1/2 cup)
  Sugar 1 Cup (16 tbs)
  Eggs 2
  Vanilla 1 Teaspoon
  Date frosting 1⁄2 Cup (8 tbs) (adjust quantity as needed)
Directions

Preheat oven to 350°.
Grease a 9-inch square baking pan and set aside.
In a 2-quart pan, bring water to a boil.
Add baking soda and stir until dissolved, then add dates and set aside to cool.
Sift together flour, baking powder, cinnamon, and salt; set aside.
In a bowl, cream together butter and sugar.
Add eggs, one at a time, beating well after each addition.
Pour off water from dates into butter mixture; beat until blended.
Stir in flour mixture.
Stir in dates and vanilla.
Pour batter into prepared pan.
Bake for 40 minutes or until a wooden pick inserted in center comes out clean.
Transfer pan to a wire rack and let cool completely before frosting.
