Banana Nut Cake
|All purpose flour||1 Cup (16 tbs)|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs), replacing|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Banana||1 Medium, mashed|
|Walnuts||1⁄4 Cup (4 tbs), chopped|
1. Preheat oven to 350Â° F. Use 8 x 8 x 2-inch cake pan with nonstick finish if possible; otherwise, lightly grease and flour one 8-inch square cake pan.
2. In large bowl, combine flour, sugar, sugar replacement, baking powder and baking soda. Add eggs, oil and banana; using electric mixer at medium speed, beat until smooth. Stir in chopped walnuts.
3. Pour mixture into prepared pan; bake for 30 to 40 minutes, until cake tester inserted in center comes out clean. Cool cake in pan on wire rack for 5 minutes; remove from pan to wire rack and cool completely.
