Spicy Applesauce Cake
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||2 Cup (32 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
|Soda||1 1⁄2 Teaspoon|
|Baking powder||1 Teaspoon|
|Raisins||1 Cup (16 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Applesauce||1 1⁄2 Cup (24 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Cream shortening and sugar together.
Beat in eggs.
Add flour, soda, salt, baking powder, cinnamon, cloves, nutmeg, raisins and nuts.
Stir in applesauce, vanilla and water.
Place half of the batter into a 9-inch cake dish lined with waxed paper.
Microwave 6 1/2 to 7 minutes on medium and 2 1/2 to 3 minutes on high, or until cake springs back when lightly touched.
Let cake stand 5 minutes before turning onto cake rack.
Repeat with second layer.
