Raisin Spice Cake

  Raisins 1⁄2 Cup (8 tbs)
  Non stick cooking spray 1
  Reduced calorie margarine 8 Teaspoon (2 Tablespoons Plus 2 Teaspoons, Tub Margarine)
  Granulated sugar 2 Tablespoon
  Egg 1 Large, lightly beaten
  All purpose flour 1⁄2 Cup (8 tbs)
  Ground cinnamon 1⁄2 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Double acting baking powder 1⁄2 Teaspoon
  Ground cloves 1⁄8 Teaspoon
  Ground allspice 1⁄8 Teaspoon
  Salt 1 Dash

1. Preheat oven to 350°F. Spray a 6 1/2-inch square baking dish with nonstick cooking spray; set aside.
2. In medium saucepan, combine raisins, margarine, sugar, and 1/2 cup water; bring to a boil. Remove from heat and set aside to cool. Stir in beaten egg.
3. In medium bowl, stir together remaining ingredients; add raisin mixture, stirring until just combined.
4. Pour batter into prepared baking dish; bake until toothpick inserted in center comes out clean, about 15 minutes.
