Cranberry Relish Coffee Cake
|All purpose flour||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Shortening||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Milk||1⁄3 Cup (5.33 tbs)|
|Cranberry||1⁄2 Cup (8 tbs), orange relish (orange relish)|
|All purpose flour||1⁄4 Cup (4 tbs)|
Stir together 1 cup flour, 1/4 cup sugar, baking powder, and salt.
Cut in shortening till mixture resembles coarse crumbs.
Combine egg and milk.
Add to dry ingredients, stirring just till moistened.
Spread in greased 8x8x2-inch baking pan.
Combine cranberry-orange relish and 2 tablespoons sugar; spoon over batter.
Mix 1/4 cup sugar and 1/4 cup flour; cut in butter till crumbly.
Sprinkle atop coffee cake.
Bake at 400° for 30 to 35 minutes.
