Easy Prune Cake
|Oil||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Vanilla||3 1⁄2 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Flour||2 Cup (32 tbs), sifted|
|Prunes||1 Cup (16 tbs), cooked, sweetened and drained|
|Pecans||1 1⁄4 Cup (20 tbs), chopped|
Combine oil, sugar, spices, salt and vanilla in large bowl of electric mixer.
After mixing well, alternately add eggs, buttermilk and flour sifted with soda.
Beat 2 1/2 minutes at medium speed.
Mash prunes with fork or potato masher.
Add prunes and pecans to batter.
Bake in a greased tube or bundt pan at 350° for 1 hour, or in 2 greased loaf pans at 350° for 50 minutes.
This is a moist cake and will keep a long time if kept cool.
