Blueberry And Papaya Cakes
|Sugar||75 Milliliter (1/3 Cup)|
|Water||50 Milliliter (1/4 Cup)|
|Blueberries||375 Milliliter (1 1/2 Cups)|
|Orange juice||50 Milliliter (1/4 Cup)|
|Cold water||45 Milliliter (3 Tablespoon)|
|Lemon rind||1 Dash, grated|
|Whipped cream||To Taste|
Slice half papaya in half again, lengthwise.
Seed, peel and dice flesh.
Place papaya in saucepan with sugar and 1/4 cup (50 ml) water.
Bring to boil over medium heat and continue cooking 3 minutes.
Stir in blueberries, orange juice and lemon rind; bring to boil again.
Mix cornstarch with 3 tbsp (45 ml) water; stir into cooking fruit and cook 1 more minute.
Pour into bowl and refrigerate until cold.
Fill cakes with whipped cream to taste; arrange on attractive serving platter.
