Oatmeal Banana Cakes
|Softened butter/Oil||1⁄2 Cup (8 tbs)|
|Mashed bananas||1 Cup (16 tbs), mashed (3 Or 4 Medium-Sized)|
|Warmed honey||1⁄2 Cup (8 tbs)|
|Yogurt||1⁄4 Cup (4 tbs)|
|Whole wheat pastry flour||1 1⁄2 Cup (24 tbs)|
|Rolled oats||1 Cup (16 tbs)|
Preheat oven to 375° F.and grease 18 muffin tins.In a mixer bowl, combine butter or oil, eggs, bananas, and honey.
Mix yogurt and soda and add to butter mixture.
Stir together flour and salt.
Add to creamed mixture, mixing until just blended.
Stir in oats.
Fill muffin pans 2/3 full of batter.
Bake in preheated oven for 18 to 20 minutes.
Remove from pans and cool on wire rack.
