Strawberry Buffcakes

As promised flap jacks are up for grabs! In today’s wicked episode, Chef Buff (master of all things bufficlious) masters the art of the Johnny cake, say goodbye to Aunt Jemima (take your diabetes with you!) and say hello to the healthy pancake!
Ingredients
  Quinoa flour 1⁄2 Cup (8 tbs)
  Egg whites 1⁄2 Cup (8 tbs)
  Cottage cheese 1⁄2 Cup (8 tbs)
  Baking powder 1 Tablespoon
  Salt 1 Dash
  Vanilla extract 1 Teaspoon
  Cinnamon 1 Teaspoon
  Banana 1
  Strawberries 1⁄2 Cup (8 tbs)
Directions

Mix all the ingredients to make a batter. Now heat a pan and spray some oil and spread the batter on it. Top the small cakes with strawberries. Brown them and serve.
