Coconut Upside Down Cake
|Shortening||1⁄4 Cup (4 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Cake flour||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Milk||1⁄3 Cup (5.33 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
Cream shortening and sugar.
Add egg and beat thoroughly.
Sift dry ingredients together and add alternately with combined milk and vanilla to the creamed mixture.
Pour over the coconut and bake in oven at 350°F.for 45 minutes.
Remove from pan immediately.
