Almond Flavored Cake
|Granulated fructose||3⁄4 Cup (12 tbs)|
|Vanilla extract||1 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Cake flour||2 Cup (32 tbs), sifted|
|Butter||1⁄4 Cup (4 tbs), melted|
Combine eggs and fructose in top of double boiler.
Beat to blend.
Place over simmering water. (Do not allow water to boil!) Continue beating for about 10 or 12 minutes or until very light and fluffy.
Remove from heat, and then beat until cool.
Beat in vanilla and almond extracts.
Fold in cake flour very gradually.
Add melted butter and fold well. (Do not stir.) Pour batter into three 9 in. (23 cm) round greased cake pans.
Bake at 325°F (165°C) for 30 to 35 minutes or until done.
Remove from oven.
Remove cakes from pans, and cool completely on racks.
