Banana Cake Cookies
|Cake mix||8 Ounce (Fructose-Sweetened)|
|Mashed banana||2⁄3 Cup (10.67 tbs)|
|Dietetic frosting mix||1⁄2 Cup (8 tbs)|
|Skim milk||2 Teaspoon|
Combine cake mix, 1/3 c. (90 mL) of the mashed banana, and egg white in a medium-size bowl.
Stir to blend completely. (Mix will seem sticky.) Drop on a cool, greased cookie sheet.
Bake at 375°F (190°C) for 12 to 15 minutes or until golden brown.
Move to cooling rack.
Meanwhile, in a saucepan, combine the frosting mix, the remaining 1/3 c. (90 mL) mashed banana, and the skim milk.
Stir to blend; then place saucepan over medium heat and continue stirring until mixture is very thick and paste like.
Remove from heat, and stir in the margarine.
Cool completely before frosting cookies.
