Apple Crunch Cake

Ingredients
  Bran cereal flakes 1⁄3 Cup (5.33 tbs) (Kellogg's)
  Granulated sugar 3 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground cinnamon 1⁄4 Teaspoon
  Margarine 3 Teaspoon
  Bran cereal flakes 1 Cup (16 tbs) (Kellogg's)
  All purpose flour 1 1⁄4 Cup (20 tbs)
  Baking powder 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Margarine 1⁄4 Cup (4 tbs), softened
  Granulated sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Lemon peel 1 Teaspoon, grated
  Skim milk 1⁄2 Cup (8 tbs)
  Pared apples 2 1⁄2 Cup (40 tbs), coarsely chopped
Directions

Stir together first 4 ingredients.
Cut in the 3 T. (45 mL) margarine until mixture is crumbly.
Set aside to use as a topping.
Crush the 1 c. (250 mL) cereal to 1/2 c. (125 mL).
Stir in flour, baking powder and salt.
Set aside.
In a large mixing bowl, beat margarine, sugar replacement, egg and lemon peel until light and fluffy.
Add flour mixture alternately with milk, mixing well after each addition.
Stir in apples.
Spread evenly in greased 9 x 9 x 2 in. (23 x 23 x 5 cm) baking pan.
Sprinkle evenly with cereal topping.
Bake at 375 T (190°C) about 35 minutes or until cake tests done.
Cool.
