Gingerbread Waffles

Ingredients
  All purpose flour 1 Cup (16 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Ground ginger 1 Teaspoon
  Ground cinnamon 3⁄4 Teaspoon
  Ground allspice 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Ground mustard 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Packed brown sugar 1⁄3 Cup (5.33 tbs)
  Egg 1 , separated
  Buttermilk 3⁄4 Cup (12 tbs)
  Molasses 1⁄4 Cup (4 tbs)
  Butter 3 Tablespoon, melted
  Raisins 1⁄3 Cup (5.33 tbs), chopped
  Cream of tartar 1⁄8 Teaspoon
Directions

In a bowl, combine flour, baking powder, ginger, cinnamon, allspice, baking soda, mustard and salt; set aside.
In a large mixing bowl, beat brown sugar and egg yolk until fluffy.
Add buttermilk, molasses and butter; stir into dry ingredients just until combined.
Add raisins.
In a small bowl, beat egg white and cream of tartar until soft peaks form.
Gently fold into batter.
Bake in a preheated waffle iron according to manufacturer's directions until golden brown.
