Maple-Coffee Cake

  Canola oil 90 Milliliter (6 Tablespoon)
  Maple granules 120 Milliliter (1/2 Cup)
  Cinnamon 2 Teaspoon
  Chopped nuts 240 Milliliter (1 Cup)
  Diced apples 1⁄2 Cup (8 tbs)
  Flour 1 3⁄4 Cup (28 tbs) (Vita Spelt)
  Oat flour 60 Milliliter (1/4 Cup)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Canola oil 120 Milliliter (1/2 Cup)
  Maple syrup 80 Milliliter (1/3 Cup)
  Vanilla 1 Teaspoon
  Eggs 3
  Plain nonfat yogurt 240 Milliliter (1 Cup)

Preheat oven to 350°F (180°C).
Filling: Mix together filling ingredients, except apples, if using.
Batter: Sift flours, baking powder and baking soda.
Warm oil and maple syrup just until warm to touch.
Add vanilla and 1 egg at a time, mixing after each egg.
Add flour mixture and yogurt alternately to the maple syrup mixture and blend after each addition.
Spread half of mixture into a greased and lined loaf pan.
Add 1/2 of the Filling mixture.
All diced apples should be added at this time, if using.
Add remaining Batter and finally remaining Filling on top.
Bake for approximately 50-60 minutes or until done.
