|Maple granules||120 Milliliter (1/2 Cup)|
|Chopped nuts||240 Milliliter (1 Cup)|
|Diced apples||1⁄2 Cup (8 tbs)|
|Flour||1 3⁄4 Cup (28 tbs) (Vita Spelt)|
|Oat flour||60 Milliliter (1/4 Cup)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Canola oil||120 Milliliter (1/2 Cup)|
|Maple syrup||80 Milliliter (1/3 Cup)|
|Plain nonfat yogurt||240 Milliliter (1 Cup)|
Preheat oven to 350°F (180°C).
Filling: Mix together filling ingredients, except apples, if using.
Batter: Sift flours, baking powder and baking soda.
Warm oil and maple syrup just until warm to touch.
Add vanilla and 1 egg at a time, mixing after each egg.
Add flour mixture and yogurt alternately to the maple syrup mixture and blend after each addition.
Spread half of mixture into a greased and lined loaf pan.
Add 1/2 of the Filling mixture.
All diced apples should be added at this time, if using.
Add remaining Batter and finally remaining Filling on top.
Bake for approximately 50-60 minutes or until done.
