Ingredients
  Canola oil 240 Milliliter (1 Cup)
  Maple syrup 480 Milliliter (2 Cups)
  Vanilla 1 1⁄2 Teaspoon (8 Milliliter)
  Unbleached white flour 480 Milliliter (2 Cups)
  Low fat soy flour 90 Milliliter (3/8 Cup)
  Cold water 120 Milliliter (1/2 Cup)
  Soy milk 120 Milliliter (1/2 Cup)
  Grated lemon rind 1 1⁄2 Teaspoon (8 Milliliter)
  Sea salt 1 1⁄2 Teaspoon (8 Milliliter)
  Egg whites 3
  Cinnamon 2 Teaspoon (10 Milliliter)
  Aluminium free baking powder 2 Teaspoon (10 Milliliter)
  Cooked 7 grain cereal 240 Milliliter (1 Cup)
  Rolled oats 5 Cup (80 tbs)
Directions

Cream together oil, syrup and vanilla.
In a separate bowl, mix the 2 flours, water, milk, rind, sea salt, egg whites, cinnamon and baking powder until smooth.
Then mix the two mixtures together and add cereal, oats, raisins and nuts.
Mix well and fill oiled 9x13-inch cake pan 3/4 full.
Bake 350°F (180°C) until light golden brown.
