Quick And Easy Fruit Cake
|Fresh fruit/Frozen or canned||4 Cup (64 tbs)|
|Vanilla extract||2 Teaspoon|
|Brown sugar||1 1⁄4 Cup (20 tbs)|
|Oil||3⁄4 Cup (12 tbs)|
|Flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
Preheat oven to 350 °F (175 °C).
Butter and line with wax paper an 8 x 12 inch (20 x 30 cm) cake pan.
In a bowl, mix fruit, eggs, vanilla extract, brown sugar and oil.
In a second bowl, sift together dry ingredients.
Stir into liquid mixture.
Bake in oven 50 minutes or so.
Let cool in pan.
VARIATIONS To batter, add grated coconut, chopped nuts or dates.
Frost with icing made from 3 oz (90 g) cream cheese, 1 tsp (5 mL) butter, 1 tsp (5 mL) vanilla extract and 1 1/2 cups (375 mL) icing sugar.
