Fruit And Walnut Cake

Ingredients
  Oil 1 Tablespoon (For Greasing)
  Self rising flour 1 1⁄2 Cup (24 tbs)
  Apple pie spice 2 Teaspoon
  Soft margarine 3⁄4 Cup (12 tbs)
  Eggs 3 Large
  Milk 1 Tablespoon
  Liquid gravy coloring 1 Teaspoon
  Light brown sugar 1 Cup (16 tbs)
  Molasses 1 Tablespoon
  Mixed dried fruit 1 Cup (16 tbs)
  Chopped walnuts 1⁄4 Cup (4 tbs)
  Superfine sugar 1 Teaspoon (Leveled)
Directions

1 First, prepare a souffle dish, 19cm/7 1/2 inches in diameter, 1 0cm/4 inches deep. Lightly oil base of dish and line with a circle of greaseproof paper (non stick parchment). DO NOT apply any more oil.
2 Use one stage method: put all the ingredients, except fruit and nuts, into a large mixing bowl. Mix to combine and beat for 2 minutes with a wooden spoon, or use an electric mixer.
3 Lightly fold in the fruit and nuts, then turn into the prepared dish.
4 Microwave on full power for 7-8 minutes.
5 Stand, covered, for 5 minutes. Turn out and, when quite cold, sprinkle top with caster (superfine) sugar.
