Cheesy Rice Cakes
|Oil||1⁄4 Cup (4 tbs)|
|Onion||1 , finely chopped|
|Short grain rice||2 Cup (32 tbs), cooked|
|Eggs||2 , beaten|
|Gruyere cheese||2⁄3 Cup (10.67 tbs), grated|
|All purpose flour||2 Tablespoon|
|Salt and pepper||1|
|Bread crumbs||3 Tablespoon|
In a skillet, heat 1 tbsp (15 mL) oil.
In a bowl, mix onion with rice, eggs, Gruyere, flour and seasonings.
With dampened hands, shape into 8 tightly packed patties.
Dredge with bread crumbs.
Over moderate heat, in the same skillet, heat remaining oil.
Fry patties 10 minutes each side.
