Christmas Gumdrop Cake
|Chopped fruit gumdrops||2 Pound|
|Chopped pecans/Chopped walnuts||1⁄2 Pound|
|White raisins||1 Pound|
|Flour||4 Cup (64 tbs)|
|Sugar||2 Cup (32 tbs)|
|Shortening||1 Cup (16 tbs)|
|Eggs||2 , well beaten|
|Baking soda||1 Teaspoon, dissolved in 1/4 cup hot water|
|Hot water||1⁄4 Cup (4 tbs)|
|Applesauce||1 1⁄2 Cup (24 tbs)|
Cream sugar and shortening; add eggs and applesauce alternately with dry ingredients which have been sifted together.
Add fruit, nuts and raisins which have been dredged in a little of the flour mixture.
Line 3 loaf pans with wax paper, bake 2 hours at 275°.
Cool for 15 minutes, pull wax paper off carefully.
