Almond Nut Cake
|Eggs||12 , separated|
|Blanched ground almonds||3⁄4 Pound|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Zwieback||16 , finely crushed|
|Shelled ground walnuts||3⁄4 Pound|
|Orange||1 , rind grated|
|Rum syrup||1⁄4 Cup (4 tbs)|
Grease a 16X13X3 inch pan.
Beat egg whites until stiff and set aside.
Beat yolks with sugar until thick and pale in color.
Beat in vanilla.
Mix nuts, zwieback, and rind together.
Gradually fold beaten egg whites into yolk mixture and fold in nut mixture.
Pour batter into prepared pan and bake in a 350 degree oven for exactly 1 hour.
While cake is baking, make the syrup.
Pour the syrup over the cake the moment it is taken from the oven.
Cool and, before serving, cut into diamond shaped serving pieces.
