Cinnamon Nut Cake
|Eggs||14 , separated|
|Walnut meats||1 Pound, finely ground|
|Sugar||3 Cup (48 tbs)|
|Zwieback||6 Ounce, finely ground (1 Box)|
|Baking powder||2 Teaspoon|
|Confectioners sugar||1 Tablespoon|
Beat egg yolks and sugar until thick and pale in color.
Beat egg whites until they stand in soft peaks.
Fold egg yolk mixture into egg whites alternately with the zwieback.
Fold in walnuts, cinnamon, and baking powder.
Turn mixture into a well buttered 10X14X2 inch pan and bake in a hot 450 degree oven for 10 minutes.
Reduce oven temperature to 375 degrees and continue to bake for 40 to 45 minutes longer or until a tester comes out clean.
Cool and just before serving sprinkle generously with confectioners' sugar.
