|Unflavored gelatin||1 Tablespoon (1 Envelope, Knox)|
|Cold water||1⁄2 Cup (8 tbs)|
|Sieved apricot pulp||1⁄2 Cup (8 tbs)|
|Grated lemon rind||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|No calorie sweetener||1 Teaspoon (4 Tablets)|
|Egg whites||3 , stiffly beaten but not dry|
Sprinkle gelatin in the cold water to soften in top of double boiler.
Dissolve softened gelatin thoroughly over hot water.
Stir in apricot pulp, lemon juice and rind and sweetener.
Chill until thickened but not set.
Whip until fluffy; fold in beaten egg whites.
Turn into large mold or 6 individual molds.
Chill until firm.
