This Apricot Sponge is terrific. Try out this delicious fruit mold for your next dessert and let me know if you like it. your suggestions for this Apricot Sponge are welcome !
  Unflavored gelatin 1 Tablespoon (1 Envelope, Knox)
  Cold water 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Sieved apricot pulp 1⁄2 Cup (8 tbs)
  Grated lemon rind 1 Tablespoon
  Lemon juice 1 Tablespoon
  No calorie sweetener 1 Teaspoon (4 Tablets)
  Egg whites 3 , stiffly beaten but not dry

Sprinkle gelatin in the cold water to soften in top of double boiler.
Dissolve softened gelatin thoroughly over hot water.
Stir in apricot pulp, lemon juice and rind and sweetener.
Chill until thickened but not set.
Whip until fluffy; fold in beaten egg whites.
Turn into large mold or 6 individual molds.
Chill until firm.
