Classic Crumb Cake
|Sugar||1⁄4 Cup (4 tbs)|
|Flour||3⁄4 Cup (12 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|Shortening||1⁄4 Cup (4 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Sifted flour||1 Cup (16 tbs)|
|Calumet baking powder||1 1⁄2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
Combine 1/4 cup sugar, 3/4 cup flour, the cinnamon, and a dash of salt; stir to blend.
Combine butter and 1/2 tea spoon vanilla.
Add to flour mixture about 1 tablespoon at a time, tossing with a fork until mixture forms crumbs.
Cream shortening with 1/3 cup sugar until fluffy.
Add egg and blend.
Sift 1 cup flour, the baking powder, and 1/4 teaspoon salt together.
Then combine milk and 1/2 teaspoon vanilla.
Add flour alternately with milk to egg mixture, mixing after each addition until smooth.
Pour batter into a greased 8x8x2-inch pan.
Sprinkle the crumbs evenly over batter.
Bake in a moderate oven (375Â°F.) for 30 minutes.
