Old-Fashioned Spice Cake
|Sifted cake flour||2 1⁄4 Cup (36 tbs) (Swans Down)|
|Baking powder||1 Teaspoon (Calumet)|
|Baking soda||3⁄4 Teaspoon|
|Black pepper||1 Pinch|
|Shortening||3⁄4 Cup (12 tbs)|
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Granulated sugar||1 Cup (16 tbs)|
|Eggs||3 , unbeaten|
|Buttermilk||18 Tablespoon (1 Cup Plus 2 Tablespoons)|
Sift flour, baking powder, salt, soda, spices, and pepper together.
Cream shortening thoroughly.
Gradually add sugars and cream together until light and fluffy.
Add eggs, one at a time, beating well after each.
Add flour alternately with buttermilk.
Beat after each addition until smooth.
Pour batter into three 8-inch layer pans or two 9-inch layer pans which have been lined on bottoms with paper.
Bake in moderate oven (350Â°F.) 25 to 30 minutes for the 8-inch layers and 30 to 35 minutes for the 9-inch layers.
Frost with a butter cream frosting.
